Vegan Spiced Chocolate Mousse

Want a delicious, quick and easy vegan dessert option? Want to trick your friends into thinking you're a proper grown-up next time they come over for dinner? Monsieur, with this mousse you're really spoiling us.
And it's super quick and easy! It assembles in less than 20 mins and can be made hours ahead.


To start, pop 2 tbsp maple syrup and 2 cardamon Pods in a mug or small dish and microwave until bubbling, then set aside to steep. Discard the pods just before using.
Melt 150 g dark chocolate. This can be done using a bain marie or with short bursts in the microwave with plenty of stirring.
Break up one 300g pack of silken tofu into a food processor and blend until super smooth. Drizzle the chocolate, spiced maple syrup, and a pinch of salt in while blending.
Finely chop a chunk (or 2 if you like it firey) of crystallised ginger and fold through the mix. Save a pinch for decorating the top if you're feeling fancy!
Spoon into small dishes and refrigerate.
So easy but so bougie!
